Tips for creating Black and White photos

I'm looking for a good technique to create B&W images from my color photos that have some "pop" to them. I know I can use the desaturate command but am looking for something a little better. Any help would be appreciated.

I normally use a Hue/Saturation Adjustment Layer (Layer>New Adjustment Layer>Hue/Saturation). Desaturate the "master" channel to -100%. this gives you the same image as the desaturate command. But- and this is a big but- you can now go into the different color channels- blue,magenta,yellow, etc...- and adjust the brightness up or down to vary the shades of grey in different parts of the image.

Or open whatever image and press ctrl and j so it makes a new layer with the same photo and delete the first layer. Then make a new layer with nothing on and place it under the photo. Mak that layer back then go back to the main photo and change the blend mode to Luminosity and it willl go black and white. Like this:

Or use the desaturate function and use curves (maybe the famous s-curve) to give depth to your image if that's what your looking for.
