Help new at illustrator,...

I am revamping one of our present logos, and another company made the logo/label for our whiskey. It is a logo placed on a black/snake skin texture background and I am trying to put an "88" behind the logo and ghost/shilloutte it behind the original logo.

Am I able to remove the snake skin background in illustrator and replace it after I put in the "88" what do you suggest?

I am new to Illustrator, being a photoshop junkie....

you should be able to just type the 88 then select it and go to ARRANGE/MOVE OBJECT FORWARD or MOVE OBJECT BACKWARDS because illustrator writes everything on one layer you can arrange each graphic independently.
