I would use Freehand for a logo like that as you can resize objects. In Photoshop you could use the pen tool and trace around the individual objects. Have each colour on a different level, go into Paths click Make a Selection which you can find by clicking on the arrow. Then you can fill the selection with the colour you like. For the words, you can find out what the are at What the Font: http://www.myfonts.com/WhatTheFont/

If you get stuck, feel free to ask any more question.

The logo would be easier to trace if you enlarge it. Go Image>Image Size and make the width 10 inches. As you are tracing it, it doesn't matter if the logo looks a bit blurry. Making the logo bigger makes it easier to see the trace line. You want to trace around the white areas and select them in Paths and fill them. Then you can make 2 more layers for the black oval and gray area. Here is a helpful tutorial for the pen tool: http://www.youtube.com/watch?v=IDrtyNmp3A4
