For example, to make one layer Black & White instead of all image, how can I do it ?

select your layer, go to menu bar >Image> Ajustments>Black&White
You do not have the required permissions to view the files attached to this post.

More info that may be helpful...when your image has multiple layers and you want to apply an adjustment layer to only one layer, the new adjustment layer must be "clipped" (restricted) to the one layer immediately below it. You can clip it to the layer below by Alt/Option Clicking the line between the two layers (which is also how you unclip them). If you add the adjustment layer via the Layer's menu, instead of from the Layers palette, you can clip the layers by checking the 'Use Previous Layer to Create Clipping Mask' box.
