Tracing with the pen tool

I am trying to trace an object with a pen tool - I can set the anchors, but I can't seem to be able to select the anchors and adjust around rounded corners or adjust to make the lines straight.

You need to select the direct selection tool in order to manipulate the line anchor points. Once you have them selected you should then see the 2 balls either side attatched with lines for you to twist and drag to make the desired shape.

Sorry, if you have clicked > held > dragged. When placing the line, as in you have tried to curve the line free hand. You will already have the points there. However if you have just made static points you will need to click the 'convert anchor points to smooth' option from the top bar once you have the point selected.
